Is it 2008 yet?

I am so ready to be over the holidays and get my house & life back in some sort of order. Christmas this year has its normal drama... though it wasn't too terribly bad. It was resolved quickly and overall, it was a nice holiday.

Husby & I got the living room in semi-order. I just have to clean it then work on the kitchen, & Puddin's room. THEN I get to finish all of that laundry that has taken over our room. I know that you are fascinated by all of this and you wish you were a Domestic Goddess like myself. HA!

I am here for 2 days and then Puddin and I are heading back to Chattanooga to spend time with my brother & his family before they head to Japan next sunday. So, when I get back home I can officially get really started on the house and get my sewing room in order so I can officially start using my embroidery machine and getting Girly Crafty Goodness back up & running! I am so friggin' ready!

Christmas

I have all my shopping done. We don't ever have a lot of money to spend for presents but we manage and make the most of it. I know we have a lot more than many people, so in that aspect, I am very thankful. This holiday seemed to be going well, though there has been a sad veil over the family. My grandmother has been ill for a very long time. My mom has seen for a while that my grandmother is near death. She has put up a really good fight but she now realizes that its time to let go. She is full of toxins, her gallbladder needs to be removed, she has Ecoli, a broken foot, 2 broken ribs, a torn rotator cuff, and is in total renal failure. Its hard to believe that she has made it this far. Her doctor said she needed to have her gallbladder removed but she refused the surgery and said, she just wants to go home. My mother just called me crying because this means that she is finally ready to rest and see my grandaddy in heaven. I know it sounds silly and cliché, but she as been so sick for so long that she is just too tired and is ready to go be with him. My mother has taken care of her for so long and my mom needs some rest as well. She has devoted her life to taking care of her mother and has put everything on hold. It may sound a little selfish, but my mom deserves to get her life back before I am taking care of her as she did her mother. My mom needs some rest. So this Christmas, we may be burying my granny. She may make it through Christmas but wont last much longer after that. So now, what was supposed to be a fun and cheerful Christmas will be a time of sadness, though we will celebrate that life she had and the times we spent with her... as crazy at it has been; we can look back and laugh now.

Friday I helped my friend Shana get ready for her Salon Holiday Party. It was a blast and a huge success for the Salon. Lots of people came and showed their love & support for Shana and her co-owner Eva Marie. If you want good hair or make up done RIGHT and HOT, go see Shana at Harlow Salon on 17th/Music Row in Nashville. She gave me the cutest haircut this week!

I have a bit of a head cold but I ended out going out to dinner for sushi with friends last night. Yesterday was tough but as the night went on, I felt a lot better. It would have been nice if husby did at least one load of dishes, but no, I get to do all of that today while he is at the Titans game sitting in the press box getting free breakfast & lunch. Did I mention he went to the game with my keys in his pocket? So, yes, I am stuck in the house and not able to run errands.

Its a nice and shitty day in Nashville and I am stuck in the house with my crazy kidlet. Whose favorite phrase right now is "It's not fair Momma!" Joy.

Boring Christmas Stuff

Christmas is just around the corner. Matt & I have already given each other our one big present to each other. I got an iPhone and he got a Halo Edition Xbox 360. We decided to get one big thing each and get Puddin' a few small & medium price range presents. We got her one expensive-ish item, an MP3 player for toddlers. She will also be getting a dress up trunk of clothes, a cradle for her baby doll, a play tea set, magnetic paper doll, Crayola color explosion glow board, and a Furberry. This of course isn't including all of the things she will be getting from her grandparents, aunts, uncles, cousins and etc. After the first of the year, we plan on converting her toddler bed to a full size bed so we will need to get rails along with a mattress and box springs. I think she will use the bed set I had when I was a kid. It is a custom made Holly Hobby set and its super cute.

I am ready for 2008. I plan on converting the office to be just a sewing room and I am going to add lots of fun new things to Girly Crafty Goodness. I just dont have the energy to do it know. So Christmas has to hurry up and get here so I can start sewing!
For some stupid reason, I cannot put a title on my posts because as soon as I type it out, it turns to Arabic?!? Yeah I don'tknow what that is all about. Anyway.....

So. I got Puddin's birthday out of the way. It was a huge success.

My brother and his family are moving to Japan in January and it has been a life long dream of mine to go there. So, this is my opportuity. I know this is shameless and there are a lot more people out there that need the money, but if you have a few extra coins to spare, drop them my way and I will greatly appreciate it. My Life


Husby & Puddin' are coming home tomorrow and it can't come soon enough. The short break has been nice, but I miss the shit out of them.

I ate at a little sushi place in Hillsboro Village yesterday. There was a very elderly couple in there that must be regulars because the waitresses were taking turns helping feed the woman and the owner helped them to their car. It was touching. These people could barely speak English, and the place was a bit of a whole in the wall, but the food was excellent and with a wait staff like that, I will be going back.

For dinner I had the tuna ahi tacos from Bosco's then headed over to Rumba for Mango Mojitos and tempura rolls. It would have been a perfect food night if I had some ice cream (preferably Maggie Moo's) but my stomach was full to the max.

I was bored and took some obligatory myspace pics and they turned out pretty good. Shana waxed and colored my eyebrows and I friggin' love them now. I will never pluck and draw in my brows ever again!!!!

I have been Susie Homemaker this week. I finally got my energy back and have been keeping the house up, cooking, baking, the laundry is done, dishes are clean, and packing hubby's bentos. I have decided not to go to Knox and just completely veg out this weekend. Husby & Puddin' are going still to visit MIL. So, I get the house to myself, get to stay in my jammies and do NOTHING. Since the house is done, so am I. I only have to pack her bag and get my brows waxed tomorrow morning. After that..... vegetation.

Among the living...

How can you not love a man with Krispy Kreme?

We got back home on Wednesday afternoon and we still haven't gotten into a good routine as far as sleep. I have had no energy to work on my house. Luckily it was clean before we left, so I basically just have to pick up here and there. But, still, I don't even want to do that. But, I will get back up to par before too long.

We worked the entire time we were in Knoxville and as much as I wanted to see my friend and her new baby, I didn't stop from the time I got there until the moment I walked out the door. But, our mission is complete... at least the majority of it is. And we get to go back next weekend, but not to work; hopefully.

Then, the weekend of Labor Day we are headed to Atlanta for Dragon*Con! Husby's woman cancelled (Starbuck from Battlestar: Galactica), but knock on wood, the people I want to meet are still going to be there. They have cancelled in the past, but hopefully this time, I can actually meet Fred & George Weasley & Neville Longbottom... or at least the guys that play them.

My BFF is in San Francisco for a conference so things are pretty boring around here. Though, he starts school soon so I won't get to hang out with him much then anyways. Puddin' starts back to school the tuesday after Labor Day so I will get a little bit of a break on those days, even if it is for a few hours. I bought her her very own bento box today for her to have for school. I know she is going to love being back around her friends and her teachers.

Husby has finally joined the World of Warcraft so my evening is being spent watching television and vegging out on the couch. If I had money I would be out with my girlfriend, but cest la vie.

One thing that Puddin' and her daddy enjoy is reading, looking at and talking about books. Husby keeps a small bookcase of his favorite books and comics by his side of the bed. They are mostly fantasy & sci-fi. Puddin' always seems to be drawn to these 2 books about a space warrior named Jandar. She really likes Jandar of Calisto. They are used paperbacks Husby got for a steal and for some reason she is drawn to the cover art.

Here they are talking about all the geeky things they enjoy about daddy's books. Ironically, Puddin' ripped the cover off of Jandar right after I snapped this picture.

I am finishing up getting our stuff together to actually really leave for Knoxville. I want to get the next 5 days over with already! Keep us in your thoughts and that everything goes okay with MIL's surgery and all the other stuff we have to get into this week.

No cooking or bentos today. I just ordered breadsticks for our dinner. Then after Puddin' goes to bed, I am whipping this house into shape so I can come home to a clean house and fall straight into bed.

f f f frittata!



So, everything got fucked up again and my trip to Knoxville has been postponed yet, again. To make a long story short, instead of me taking Puddin' to my parents then going to Knox, we are bypassing my parents' all together and all of us (Puddin', Husby, and myself) are going. Husby got sunday-tuesday off so he has 5 days to help me and his dad will watch Puddin' while we take care of his mom and get things situated at her house. Everything changed on my parent's end and was something that was totally out of their control. So, after getting EVERYTHING packed and ready to go out the door, I had to put it all back where I got it and will start over on thursday.

It was a shitty day overall and ended with Puddin' passing out in front of the tv after she and I both had a good, long cry and freak out. Husby even came home from work to try to be a calming influence but, that didn't really make much difference... poor guy. He is married to a moody woman and is the father of a little girl that is just like her momma. My dad really feels his pain. LOL!

I attempted to get her to eat something other than cheesits today, with no avail. I thought it was AMAZING and the recipe is easy peasy lemon squeezy. I got it from www.allrecipes.com. It has fast become my favorite recipe site! I made a ramen noodle frittata. Holy crap! Good Stuff. I halfed the recipe, added some bacon and put the cheese in while I was cooking. I topped it with sour cream and some more cheese. It will go really well in Husby's bento tomorrow.

Tomorrow Puddin' and I are heading to visit my parents then the next day I am heading to Knoxville for the rest of the week to help my MIL get prepared for surgery. I am going to miss her something terrible. But, its something that has to be done.

She has used the potty a few more times and I just put on her first cool alert pull-up. I am hoping those help get her into the habit of going to the potty. She thinks it is pretty fun to sit there and act like a big girl. I am very excited and proud for her.

I have gotten the house in the shape I want it to be in when I get back and I threatened hubby with his life that it better be like that when I get back. I assume it will be because all he has planned is laundry and playing Halo.

Once this little trip is over, its time to start planning Puddin's 2nd birthday party. I think we are going to do a Mickey Mouse theme this year.... but, it could change between now and then.

My Big Girl!


Tonight, my Puddin' was really wanting to just sit on the big potty. So I of course, let her. While she sat there she was practicing counting to 5 and while I happened to be on the phone with her daddy, she pee peed in the potty. I am so proud of her! She is on her way to being such a big girl. She has her big girl bed, which she LOVES and now she has used the potty. I am overwhelmed with love for her.

Last night I made this kick ass casserole I found at KraftFoods.com. It was super simple and pretty much had all of hubby's favorite things. I was going to make everything seperate then remembered I had a can of mixed veggies so I threw this together instead.

His bento for tonight is basically all leftovers and I try to be the leftovers queen.

The ramen is what Puddin' didn't finish from her supper last night. The onigiri is what didn't get eaten from what I made the day before and the casserole and pudding were in the fridge waiting to be eaten. You can't go wrong with that.

EASY CHICKEN BAKE
1 pkg (6 oz) Stove Top Stuffing Mix for Chicken
1-1/2 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 can (10-3/4 oz) condensed cream of chicken soup
1/3 cup Brakstone’s or Knudsen Sour Cream
1 bag (16 oz) frozen mixed vegetables, thawed, drained
Preheat oven to 400°F. Prepare stuffing mix as directed on package; set aside.
Mix chicken, soup, sour cream and vegetables in 13x9-inch baking dish; top with the stuffing.
Bake 30 min or until chicken is cooked through.

I haven't been motivated much to do my bentos but today I had such a joy cooking and doing food prep. This is hubby's bento for today.

Green box - 2 onigiri (from my new molds), green grapes & little fishy bottles of soy sauce

Big Orange Box - 2 ham & cheese pan-fried wraps & brown sugar glazed sweet potatoes (recipies below)

Small Orange Box - banana pudding I made last night

*Ham Wraps Recipe*
I threw this together with what I had, but you can change it to your taste

10 egg roll wrappers (the rest of the package from last time)
1 package of thin sliced deli ham (I used Kroger brand)
1/2 cup of shredded cheese
2 heaping tablespoons of mayo
spices to your liking (I used a spice mix by Emeril)
1 tablespoon of minced garlic

-Chop the ham up semi fine and mix ingredients
-spoon mix onto wrappers and roll as package indicates
-pan fry on medium for 2-4 minutes on each side depending on how brown you want them - I cook with EVOO but its your choice on the oil
-place on papertowel on a plate to drain- let cool about 5 minutes and ENJOY!
-These heat up really fast in the microwave and are not half bad cold

Look at all this awesome stuff I ordered from Sugar Charms! I cannot wait to use this it all in my bentos! Seriously, I am so damn excited!

I finished The Deahtly Hallows. It was simply amazing. I cried, I laughed, jeered and cheered. J.K. has done the series justice and brought the story to a very satisfying end. I am happy at how good it was but sad that it is over. I can't wait to read the books to Puddin' when she is older.

Yesterday I went to the international market that is closest to my house. There is another I want to visit that is by the airport, but I will have to hit that one earlier in the day. I found the furikake I wanted for my onigiri and opted for the freeze dried shrimp bits with nori and seasoning. I am not a big fan of sesame. I tried it on a little ramen last night... it's different, but not bad at all. I also got some pre-made, frozen chicken buns and when I opened the box, they were moldy. I was so pissed! I will take them back this weekend and get my damn $4 back. LOL! I also got various Japanese candies, treats, rice noodles & some Equadorian baby bananas. Puddin' is a little intimidated by them, but she realized they taste the same as the big ones, so she is okay with that.

I was going to have to wait a couple of more weeks to get my other rice cooker from my parents so today while at Target, I ended up getting a microwave rice cooker/vegetable steamer. It was only $8, so I figured it was worth trying. I also got some Reynold's steamer bags for the microwave. I hope to try it this weekend. The Dollar Spot at Target also was the Hello Kitty mother load for cheap bento/lunch supplies. I got a vinyl lunch bag, a 2 pack of gel ice packs, a pkg. of zip lock bags, 2 take a long snack boxes with lids (there were mini size boxes inside the big boxes as well), and a water bottle.... all of these were Hello Kitty mind you. I was completely chuffed!

The main reason I went to Target was to ogle over the back to school supplies. I friggin' love school supplies. I feel like I want at least one of eveything. I can actually justify not needing them, but some things are so cute, I just have to have them. LOL! Pencils, pens, notebooks, lunchboxes, backpacks, rulers.... ALL of it just makes me giddy, I don't know why I have such a love for school supplies, but it is something I have always loved. I got hubby some new hand soap for his bathroom because the bottle of Old Spice soap he was using was making my nose burn. It's back to Dial for him.

Hubby's friends from collge and their son stopped by this afternoon on their way back to Memphis. It was nice finally meeting them and they treated Puddin' and I to lunch at the Rainforest Cafe. Puddin' didn't have a good nap, so she was a little cranky. But, it was nice talking with them and we hope to visit them in the near future.

Jess' Cheesy Chicken


Jess' Cheesy Chicken is what I have decided to name my chicken creation that I posted the recipe for a few posts back. Tonight I unleashed my culinary genius again and created "Jess' Chicken Rolls." Yeah... I know it isn't very original, but I have never been one for creative writing. So prepare yourself for a quick and easy, BENTO FRIENDLY, delicious recipe from my kitchen to yers.

1 pkg. of spring roll wrappers (I only used 10 from the 20 count pkg.)
1 large can of chunk chicken (I used wal*mart brand)
6-8 baby carrots (chopped)
1/2 of a large cucumber or 1 whole small cucumber (chopped)
*spices to taste.... (personal preference)... I used
salt & pepper
basil
onion salt
garlic salt
paprika
and a little tobasco - because my Mother in Law was right that a little tobasco makes everything taste better

-while you are mixing your ingredients, have some oil warming in a skillet
-mix everything together - except for the wrappers of course
-spoon a decent amount of your mixture onto the wrappers and roll up according to instructions or however you please... just be sure that one corner is tucked under while frying so that it keeps that 'egg-roll' shape
-the ingredients makes 10 good sized rolls
-turn the oil you are warming up to medium
-place as your rolls in the oil and pan fry for approx. 2 minutes on each side.
-if you want a more brown roll, add 30 seconds to 1 minute to your cook time
-place on a paper towel to drain the grease while cooling
-ENJOY!

These are good even when cold - goes well with mustard or sweet and sour sauce - try it with whatever your favorite sauce is or add your own spin to the recipe and let me know about it!

I thought of this off the top of my head and am pleased as punch that it turned out so well. Hubby is über excited to try this in his bento tomorrow.

Since my rice cooker died, I haven't really been in the mood to Bento. We also went to Knoxville this weekend to visit my pregnant friend to give her some of Puddin's baby clothes and things and to see family. We also saw Harry Potter and the Order of the Phoenix while there. It was pretty good. I think I need to see it again though.

I am going to try to start up my home organizing business again. I am really going to be proactive about it. I have a big organization/cleaning project coming up in the next few weeks and it is getting me motivated to get back into it again. I am excited to tackle this house and getting it back in order for the homeowner.

The picture of Puddin' was taken this morning. Hubby took her to visit Granna and her friends at sunday school before we headed back to Nashville. I am starting a blog page for my business and will have the link up soon. So, if you know anyone that needs some organization help.... please let me know.

Hubby 's 1st Bento

My rice cooker crapped out on me today. I got to use it all of 3 times. Now that I want rice all the time, I guess I need to go buy a new one. Frackin' pisses me off.

I made this awesome spicy/cheesy chicken today. Hubby loved it so I fixed him his first bento with the leftovers. Also, in his bento is tortilla chips to crumble on the chicken, slightly salted edamame, caramel apple pieces, carrots with ranch dressing for dipping and 2 pieces of peanut butter candy.

He was really excited to take the to work. I hope he likes it!

*recipe* (feeds 2 or 3 depending on how many you eat)
-6 thawed boneless/skinless chicken tenderloins
-1 can of cheddar cheese soup
-1 can of rotell drained
-1 tsp. of tabasco or hot sauce
-1 tbsp. of dried basil
- salt & pepper to taste

cook the chicken on medium heat until its no longer pink (I cook it with a little EVOO)
add can of cheddar cheese soup, rotell, hot sauce and dry ingredients
cover and let cook for about 5 minutes then turn the chicken and let cook for another 5 minutes on low

It's really tender and taste super good. You can also use chicken from the meat department/butcher, but frozen tenderloins cook up fast and we keep them in our freezer all the time

New Hair & New Bod

While I was in Chattanooga, I got my hair cut. I used to wear it like this all of the time and haven't had it this short since before I gave birth. I decided I was tired of pulling my hair back to get it off my neck, so I got it lopped off. I love it! I missed having short hair.

Also while I was back home, I bought some new clothes; mainly pants. I am down 2 more sizes since last summer. I was still wearing all of my pants from last year and they were falling off my ass. It was time for some new cute, summery capris. I was so stoked to be in a size I hadn't been in since about the 10th grade. Overall, I have lost 121 pounds since I last weighed a little over a week ago.

I went to a tattoo convention while there and also got pierced by my good friend Jessica. I finally met the cool people she works with at Standard Ink and swapped toddler stories with Amber, the other piercer. There is a girl that works there named Brandy and she looks like she could be Maya Roudolf's twin.

Puddin' and I are settling in at home. She is happy to be with all of her stuffies & kitties and her new playhouse and swing set. Tomorrow I will get back to packing bento boxes. I got 3 new ones while in Chattanooga that I can't wait to try out. I also found some easy recipes in my mom's prevention magazines that I can't wait to try.

Tonight I am going to shower, shave, do a salt soak, paint my toenails and veg out. It's good to be back home.

I wasn't very hungry last night. After eating so much better lately, my stomach was revolting. LOL! I think it's so used to all the crap I have always eaten that once it got good stuff, it was was like, "What the hell are you doing to me?!" But, I know it is going to pay off in the long run.

I had your basic chicken flavored, ramen noodles with onigiri with nori & crab stick inside and a little low sodium soy sauce for dipping. It was simple but filling. Puddin' loves noodles and had two bowls of ramen and was still asking for more even though there wasn't any. I think she would be happy eating noodles, yogurt, cheese, raisins & cheez its for the rest of her life. She is such a fickle little thing

Tomorrow my dad is coming to town to help set up Puddin's swing set and then we are heading to Chattanooga for the holiday and the first ever Chattanooga Tattoo Convention. I also plan on getting pierced while in town. So, I will tell you about it when I get back... maybe.

I will be taking my laptop so I can update while there, but I can't promise many because I want to spend as much time with my family and friends.

There was so much of this, I only got through about half of it and had to save the rest for tomorrow. I had fun making the onigirl and prefer the ones with nori and soy sauce. It was fun making the little stars. I need to get some more funky hole punches to make them even more fun.

I didn't get to the sushi last night, instead opting for a cheap dinner with puddin.' Today my FIL took us out to Rafferty's where I got the chicken salad and croissants. I have to go back for the croissants because they were EXCELLENT. If you have one close, I suggest you try them.

*Tortilla roll ups Recipe*
Mix pkg, cream cheese, 2 sun dried tomatoes cut into strips, teaspoon of basil, dash of Tabasco, salt & pepper to taste, a little olive oil to make it soft. Spread it on 10" tortillas, roll up and cut into bite size pieces

This whole Bento experiment is going really well. I am slowly but surely getting Puddin' to eat better. I am also eating much better. She is still ambivalent about eating the fresh fruits and veggies, but I keep putting it in front of her so she can get used to seeing it. I just hope she realizes it tastes good.

I cleaned off ALL of the fruit, cut it up and put it all together. Fixed a really fast and easy fruit dip and sat down and had an all fruit lunch. It was fan-freakin-tastic!

Tonight, I think I am going to make some rice and try my hand at rolling some sushi. I will post pictures of the results if I do attempt it. It should be funny none the less

I talked to my friend last night and we hashed things out. We were able to see each other's side of the situation better. Things will not be the same, obviously, but everything is more clear now. I still need to find more friends and not rely on just one person. It isn't healthy for my well being and this is something I must work on. I know I can do it.

*RECIPE*
The dip is just one regular tub of strawberry cream cheese and a small jar (or half of a large one) of marshmallow cream. Its damn good and keeps well in the fridge. You can always add more marshmallow cream to your liking. The marshmallow cream is fairly hard to stir by hand so I mix it really quick with my hand mixer.

BFF

I think I invest too much into friendships because the feeling never seems to be reciprocated. Granted, I relied too much on him to just be there. I knew that he was getting serious with this girl and I knew that once the fall semester started that I wouldn't see him as often. I just didn't think that all of this would come up on me so fast... and not right at the moment that my birth control is kicking in and I am completely fucked in the head as far as my hormones. So, Friday night wasn't pretty. Basically, I got ditched for the new girlfriend. I told him I didn't want to meet her, but he sulked until I gave in. So, I pouted and he went off on me. It was ugly and many things were misconstrued and as much as I tried not to, I cried, I yelled, he yelled and then she called asking where he was and he left. And that was that. I came home and cried to hubby because I just can't understand why I always put my heart into a friendship. I had a friend that fucked with my feelings for almost 20 years. I don't know how to have a healthy, close friendship, and its fucking sad... and pitiful. Here I am, 33 years old, and I can't have one fucking best friend; someone that I can just count on. Maybe I ask and want too much, or expect the same investment that they just can't give. I don't know, but it sucks.
